Job Description

The Department of Food Services at Syracuse University is seeking to hire an Assistant Director of Retail Dining.

The Assistant Director will provide leadership, support and guidance to Cafés and Student Centers managers, exempt, non-exempt, bargaining unit, student and temporary staff. Develop, train and supervise students and staff. Identify menu and service improvement opportunities, expanded product offerings and incorporating the latest trends in food service. Plan and direct special events.


Degree in Hotel/Restaurant Management or related field and 5+ years of related experience.

Experience in a high volume multi-unit Franchise operation.

Must be able to teach and motivate supervisory staff, bargaining unit employees, student management, student employees, and temporary staff, to provide safe, nutritious meals for student customers, all while keeping NYS sanitation standards.

Job Specific Qualifications

Excellent communication skills, strong organizational, time management and leadership skills.


Manage the operational activities of two food courts and 10 snack bars

Develop, train and follow through on food service locations in all aspects of day to day operations

Assist in the organizational responsibilities of University Food Services.

Plan and develop menus, direct food purchases, monitor inventory, forecast future purchases.

Engage student customers, monitor and maintain budgetary goals.

Develop budget recommendations, maintain records, review and adjust labor and food costs to achieve departmental goals.
Process receivables and authorize expenditures. Review and approve payroll.

Comply with all labor, union and university policies/procedures and ensure that all staff complies.

Observe and train employees to ensure constant and consistent service, awareness of food allergies, cross contact, proper food handling and cooking techniques. Identify efficiencies and cost control measures in order to improve bottom line results.

Meet individually and as a team with management members to define operational goals and objectives. Review and approve plan to achieve same.

Meet with student customers, student groups, to discuss food choices, allergies, advice class projects, and participate on search committees.
