Job Description

Sous Chef will provide supervisory assistance to the Executive Chef and senior management of Food Services in the day to day operation of five Dining Centers. Responsibilities are developing recipes, establishing menus, working with Purchasing Agents and staff training. Assist with maintaining procedures, overseeing food production and appealing presentation to students. Assist to ensure hygiene and food safety standards are met. Assist in monitoring the commercial cooking equipment is in good condition and report any malfunctions before it affects the food product or staff.


Degree in food service or culinary certificate from accredited school.

Minimum of five years of kitchen knowledge in food preparation, presentation, sourcing and purchasing.

Experience in a high volume environment. Proven ability to train and lead a team.

Job Specific Qualifications

Must have good oral and written communication skill while working with others.

Attention to detail to produce menus, procedures and training programs.

Flexibility to work in multiple locations and diverse population.


Provide assistance in leadership, supervision and overall guidance to the Executive Chef and Food Services Dining Center senior management team to ensure all five dining centers recipes are followed and consistently meet nutritional and allergy information in addition to vegan and vegetarian standards.

Train cooks, cook helpers, and other dining center staff in culinary techniques, cooking procedures, sanitation and safety. Work directly with staff to enhance preparation and presentation of food..

Work with Purchasing Agents and Vendors to ensure the highest quality of food for the cost. Work with the Purchasing Agents and multiple vendors while ordering products to determine possible allergens. Work with the Dietician to review/identify recipes for allergens. Assist with entry of recipes into FoodPro and or other software as needed.
Assist in menu planning, costings and brand management of all Food Services locations.

Administer and follow University, regulatory agency and food safety standards. Assist in monitoring the commercial cooking equipment is in good condition and report any malfunctions before it affects the staff.
